Yummy food

For me, a big advantage of this experiment is that everyone knows when dinner is. Usually I’m texting my husband throughout the afternoon to triangulate when he’ll be home. It’s nice to be able to plan exactly when we’re eating and to actually have everyone show up at that time.

Shrimp was on sale at Harris Teeter, so Wednesday night that meant Coconut Shrimp Soup, a favorite of ours. Tonight was tuna steak (also on sale at the Teet) with a side of Spicy Peanut Noodles. I try new peanut noodle recipes every couple of weeks, and this version was one of my favorites. Here it is:

Spicy Peanut Noodles
1/3 cup vegetable broth
1/3 cup natural chunky peanut butter (Trader Joe’s is good)
3/4 tablespoon fresh minced ginger
1 tablespoon soy sauce
2 tablespoons honey
1–2 teaspoons chili garlic sauce (depends on how spicy you like it)
1 clove garlic, minced (this makes it extra garlicky, so omit if you’re alliumphobic)
10–12 ounces dry pasta (linguine, soba noodles, whatever)
3 green onions, sliced

Whisk together the first seven ingredients. Cook and drain the pasta. Combine noodles, sauce, and green onions in a large bowl.

    Peanut noodles were delicious. My daughter got hung up on the idea that peanut butter only goes in jelly sandwiches, not on noodles, and that somehow I had made a terrible mistake. But that’s another story. We all ate and enjoyed!
